“Breakfast is the most important meal of the day.” How many times have you heard that saying? Yea, me too! On the morning after Oprah changed my world and blew my mind in five minutes I woke up ready and raring to go. Honestly, what morning wouldn’t be complete without a short stack and strawberry compote? I love whipping up a batch of protein pancakes, but on this particular day I did not feel like dousing them in maple syrup. I had some strawberries that were about to take a turn for the worse and a little batch of chia seeds left. So, I did what any home chef would do and decided to chuck them in a pot. To my surprise they took my pancakes over the top Y-U-M!
You know how I know something is delicious? It is because Cory makes a surprised face and goes in for seconds. Yes! Even four years into this healthier lifestyle he is still surprised when things that are good for you are surprisingly delicious. You can make this jam with any type of berry you have. If you tend to buy in big batches and they turn before you use them all this would be a great way to use them up! You can play with the berry combination or the sweetness and use this compote/jam on everything from pancakes to a soul satisfying PB and J!

You could even add some Collagen Peptides to this jam to make it even more healthful and gelatinous.

Combine 1 mashed ripe banana with two eggs, 2 scoops of protein powder. (I love Standard Process Whey Protein Powder.) 1 tsp. cinnamon and a dash of vanilla.
Melt coconut oil in a pan and pour batter into 3-5 pancakes and cook over medium-high heat to golden brown.
