In between all of the crazy that comes with earning “new mom” status, I am finding that family and friends visiting gives me some time to cook. Something that I already miss doing. Since I had extra hands around, I decided to whip up a quick egg casserole for my family to enjoy. Egg casseroles are something I often do when my family is together since they are easy, versatile and are big enough to feed an army. This casserole takes very minimal prep and it can be cut and refrigerated for an easy on-the-go, protein-packed delicious breakfast.
