Mama Judy’s Cruciferous Arugula Hazelnut Salad

My mom has always cooked meals that used simple flavors like bowtie pasta with artichokes, olives, tomatoes and white wine. She can make a head of broccoli taste like magic and this salad is no different!  She made Cruciferous Arugula Hazelnut Salad a couple of times right after CJ was born and it was on request on her most recent visit to Northern California. We had some family friends over and it was a HIT!

Both arugula and brussels sprouts are cruciferous vegetables which are chock full of folate and vitamin K. Arugula is a leafy green vegetable that is rich in fiber and calcium as well as vitamins A and C. Since it has a peppery taste, it lends itself well to your favorite pizza or pasta dish. I decided to add some crunchy hazelnuts to this dish to increase the depth of flavor! Feel free to roast them to really pack a flavor punch.

This salad makes the perfect side dish to any meal, but it can also be served alone or topped with your favorite lean protein.
