You guessed it, today’s post is all about the beet root. Beets are certainly an acquired taste. They are earthy in flavor, and are so beautiful in color that they look like candy on your plate. As I got older, I started to order beets more and more. I have had them roasted in salad, in borsht, and even pickled with pistachios. I love pairing my beets with something equally as earthy like goat cheese, and then counter balance them with something acidic. When I first started cooking I would always see beautiful beets at the farmers market, but I thought they would be super hard to cook. News flash! They could NOT be any easier, and I promise to give you a recipe in a few moments.
First, I want to talk to you about why you should add beets to your diet immediately. Beets have the highest sugar content of all vegetables, and are quite high in carbohydrates, but you should be fine if you only eat them 2-3 times per week. The beets greens however, can be eaten all day eryday! Beets should be eaten for so many reasons, but most importantly they can help decrease high blood pressure, detoxify your body by helping purify your blood and liver, they have anti-cancer properties, help fight inflammation, and they may help make your workout better by increasing your stamina!
How can you eat beets? Well you can…
Grate them raw and add to salad
Mix them into your next smoothies
Add them to your nest pressed juice
Make Borchst (Beet Soup)
My favorite way to eat beets is to roast them! It brings out their sweetness. You can choose traditional red beets or a milder golden beet. Cook them both the same way.
Ingredients:
Beets
Olive Oil
Tin Foil
Directions:
Preheat oven to 400 degrees. Cut greens and bottoms off beets. Place them on foil and coat with olive oil. Cover with foil tightly and bake for at least one hour. You know they are done when your fork no longer gets stuck (like a potato) Remove from oven and let cool. Once cool, the skin should peel right off. Slice in half inch slices and eat them alone or in your next salad or smoothie.
