They say there are no accidents. I am not sure who ‘they’ are, but in the case of Sunday nights dinner I accidentally had to make a completely vegetarian dish because the salmon I had in the refrigerator took a turn for the worst. Cory and I are still learning how to be adults and with our crazy hectic schedules I find myself throwing out more groceries than I care to admit. Me, I can live on eggs, avocado and thai takeout, but when Cory is home I like to cook at least two square meals per day. In the Sinning household Sunday’s are for lounging, boating, church and napping. I was way too lazy to go to the grocery store [even though it is only a mile away ] so I decided to pretend I was on Chopped and put my culinary prowess to the test.
btw…how adorbs is that face above? He was shocked that something meatless could tasted so good!
I have made my southwest black bean burgers many times over, but never for Cory because he is a meat and taters kind of guy; however, last week I went to my friend Naomi’s sisters house for vegan taco night and couldn’t believe how much a mixture of vegan soy crumbles, chopped mushrooms, garlic and onions took on the texture of meat. SO what I created was a dish of a delicious patty over complex carbs [sweet potato] and topped with healthy fat and a sweet mango salsa. It truly looked beautiful, but the expression on Cory’s face was priceless. We both were satisfied and a meat-free meal felt good on the tummy!
So without further a do….here is the recipe for my mushroom/black bean burger (should make 4 patties):
Patty Ingredients: 1 Can Black Beans 2 Cups Finely Chopped Portabella Mushrooms 1/2 Chopped Red Pepper 2 Cloves Chopped or Pressed Garlic 3 Chopped Green Onions (Include Whites) 1/4 Cup Quick Oats 1/4 C Shaved Parmesan Cheese or vegan cheese 2 Eggs or 2 tbs Chia Seeds in Water (for fully vegetarian) 1/2 Cup Bread Crumbs or Whole Wheat Flour 1 tsp Cayenne Pepper Salt and Pepper To Taste |
Salsa Ingredients: 1 Mango Chopped 1/4 Cup Chopped Tomatoes Garlic Salt White Balsamic |
Extras: 1 Large Sweet Potato 1 Tbs Honey Dash of Garlic Salt 1-2 Tbs Hot Sauce 1 Ripe Avocado |
Directions: While working on patties wash and pierce a sweet potato and microwave on potato setting or at least seven minutes on high. In a large bowl add washed and dried black beans and mash. Add all chopped veggies beans, mushrooms, red pepper, garlic and 3/4 of onion. Add oats, cheese, eggs, spices and mix. Add coconut oil to pan and melt over med-high heat. While oil is melting form patties and coat in breadcrumbs. Sauté in pan and brown on both sides. Serve immediately.
Salsa: combine mango, tomato, vinegar and garlic salt. Mix well and set aside.
Potato: Cut in half and remove flesh in a separate bowl. Add hot sauce and honey begin to plate.
Plate: Lay down sweet potato mixture, top with patty, avocado, salsa and remaining green onion. Enjoy!
Sometimes we think that vegetarian or vegan food can be bunny food, but bunny food can be delicious. So I challenge you to eat plant based food at least once per week. I hope you like it.
