A few weeks ago,  I had the opportunity to head towards Sacramento and spend the day with Safeway, Cobram Estate, Dasani and Boars Head. We learned all about the process of creating the beautiful olive oil that is Cobram Estate. We spent the day tasting and eating in their open air kitchen and finished up by making flower crowns amongst olive trees on a glorious California afternoon. Getting a behind the scenes look into the practices of brands that Safeway carries is always so eye opening. The TLC that goes into creating accessible, high, quality product is not lost on me. Cobram Estate Olive Oil was founded in 1998 and has been the most awarded EVOO company int he WORLD since 2015. CE is Australia’s #1 olive oil producer and California’s #3 producer, providing 35% of Cali’s olive oil each year.

Cobram Estate has a “tree to table” process which means their olive oil is pressed and bottled within hours of picking. Cobram Estate olive oil is fairly new to the states as they originated in Australia.  To give you a little insight on olive oil quality, industry standards require extra virgin olive oil to have an acid profile below.8%. Cobram Estate EVOO has an acidity profile of .3% and the robust, yet balance flavor of their oil enhanced every dish we consumed.

How to choose your olive oil:

Mild Flavor: Baking, sautéing and dressings

Classic: Roasting, sautéing and dressings

Robust: Grilling, sautéing, dipping

Premium selects are for drinking right out of the bottle LOL JK, but are perfect for finishing foods. Drizzling on fresh pasta or veggies, dipping bread or using for craft cocktails.

Did You Know?

Olive oil is chock full of polyphenols! Polyphenols are antioxidants which have been linked to a decrease in inflammation, aging and weight gain thanks to their free-radical fighting properties.

The spicier and more pungent the olive oil the more antioxidants it has.

Olive oil has antibacterial properties.

You should use your oil between 4-6 weeks of purchase. Keep that in mind when buying large containers of oil.  Rancid oil actually increases cholesterol and heart disease.

Olive Oil is also a heart-healthy oil. Full of mono and polyunsaturated fats. There unsaturated fats can help lower your LDL or “bad cholesterol” levels which are linked to clogged arteries and help reduce your risk for heart disease.

Temp to stop cooking olive oil should be around 450 degrees Fahrenheit.

For today’s recipe, I wanted it to feel comforting and use unexpected ingredients! Velvety Cobram Estate Olive Oil, Dasani Seltzer and sumptuous coconut cream topped with a Boars Head salty-sweet crumble makes these oats perfect for entertaining!
