Curry Shrimp With Snap Peas

Ingredients:
Curry Shrimp
2 Tbs. Organic Coconut Oil
2 Tbs. Curry Powder
1-2 Dozen Shrimp (peeled and deveined)
1 lb Snap Peas
1 C. Coconut Milk
Juice of 1 Lemon
Directions: Melt oil over medium heat. Add curry, and let cook until carmel in color. Add shrimp and snap peas. Let cook until almost pink and peas start to become tender. Throw in coconut milk and lemon juice. Bring mixture to a boil, then reduce heat and serve over brown rice or quinoa.
