I am all about the quickie…meal that is. I love throwing peanut butter and banana on a rice cake for breakfast or quick oats with berries. I rarely buy cold cuts, but when I do it must be low sodium roast beef. I love it in a wrap, with probiotic filled sauerkraut or a pickle with spicy mustard. This protein packed sandwich is easy, quick and delicious!
Ingredients:
1 Free Range Organic Egg
1 Slice Ezekial or Sprouted Bread Toasted
1 Handful of Spinach
1-2 Slices Low Sodium Roast Beef
1 Tbs Goat Cheese
1 Tbs Spicy Mustard
1/2 tsp. Fresh Horseradish
Directions:
Toast bread and fry egg in olive oil over medium heat until yolk is desired texture. Mix together goat cheese, mustard and horseradish and spread on toast. Top with spinach, beef and fried egg. Add hot sauce or green onion and serve. I had mine with a cup of tomato soup and it was yummmmyyy!!! I would love to hear about your quick meal ideas.
