Since I started my blog, healthy cooking was a mainstay here in casa de TWF. “Conveniently healthy meals”, cooked in minimal time, using REAL ingredients was what it was all about; simple and convenient. When I first became a mom, I thought I was ready for a lot of it; the good, the bad, the ugly. The truth is, I wasn’t, but over time, I tackled many of the oye’s and joys that come along with motherhood, but this past year, finding the time to work, grocery shop and cook elaborate meals was definitely put on the back burner.
Now that little man and I have our routine down, I am finding a little more time to meal prep and turn up the heat. Recently, I turned to Green Chef to help me on my plant-based eating journey. They deliver pre-portioned ingredients and recipe cards that help you whip up a delicious meal at home.
I do not follow a specific “diet”, but I do believe in eating whole foods. We eat lots of fruits, vegetables and whole grains, nuts, seeds and a small amount of dairy and animal protein. Lately, I have really loved plant-based meals and am surprised at how flavorful and satisfying a plant-based meal can be.
I have been creating my own dishes, but sometimes, they leave me with the feeling of wanting more. My husband went away on a business trip last week, so I took the opportunity to free myself from the grocery store and filled my first Green Chef box. I chose Veggie Pad Thai, Bavarian Power Bowl and Black Bean and Mushroom Enchiladas. Green Chef has a ton of different boxes that are all designed to help you follow a specific diet like keto or plant-based. Each and every one left me feeling full and satisfied and since I was just feeding myself and CJ, I had enough leftovers for at least 1-2 more meals.
Green Chef has been the third meal subscription box I have tried. Unfortunately, many of the others went to waste- they just didn’t live up to the hype. What I loved about Green Chef is that I can choose my meals for the week from a variety of recipes. You simply choose the plan that is right for you: Keto, Paleo, Balanced Living or Plant-Powered. All ingredients are organic, prepped in recyclable materials and sauces are low in sodium. You can have them delivered to your door every week with 2 or 4 servings per recipe. It inspired me to try new flavor profiles and dishes that I likely wouldn’t have attempted to make on my own.
The plant-powered meals were absolutely delicious! Beans and legumes provided plenty of protein, whole grains and sauces like cashew crema provided satiety and the veggie pad-Thai was chock full of flavor and simply felt like a warm-hug to the soul. If you are someone who hates to navigate the grocery store, you have limited time or want to hone your kitchen skills, I highly suggest ordering your first Green Chef Box today!
In the past, I have left meal kits in the refrigerator for too long and they went to waste. Other boxes, ingredients were too complicated and intimidating. Even though I left these meals for a couple of days, everything was as fresh as could be and I cannot wait to get my hands on more plant-powered meals in the future.
