Kale is not just “so hot right now”. It is a versatile green with so many health benefits! Once you break down those tough fibers, you have a base for amazing salads with staying power, smoothies and super delish side dishes! I wanted to make a quick and easy salad with ingredients I already had in my refrigerator.
Ingredients:
4 large handfuls of washed pre-cut kale leaves
Juice of 1 Lemon halved
Olive Oil 1/4 Cup plus 1 Tbs for Massage
Pinch of Sea Salt
1 Large Mango Diced (About 1 Cup)
1 Handful of Walnuts or nuts/seeds of your choice (about 1/2 C)
1/4 C Red Wine Vinegar
1 Tbs. Honey
Fresh Cracked Pepper
Directions:
Place washed kale in large bowl. Pour half of the lemon juice over kale, drizzle with Tbs. olive oil and a pinch of sea salt. Dig in with both hands and massage the leaves for at least two minutes. Put some muscle in it! Your mouth and bod can thank me later. This should reduce the height of the salad by almost half.

Top with chopped mango, walnuts and pepper to taste.
Vinaigrette: Whisk together red wine vinegar, honey, juice of half a lemon and lemon or olive oil. Pour over salad and toss.
Enjoy by yourself as a quick weekday meal or precursor to a fabulous lunch or dinner! For added impact toss in a protein of your choice for long lasting energy!
