PlantBasedxTWF: I Challenge You To Eat More Plants

Wahooooo!!! The PlantBasedxTWF Challenge day has finally arrived.

 

You may have noticed that I have been sharing bits and pieces of my November PlantBasedxTWF Challenge on stories, but today is the day I get to share it all with you!  Before I dive into all the details, I want to quickly share my WHY for creating this 2-week challenge. A few months ago, my niece came to live with us. My brother and sister in law (her parents) turned Vegan over two years ago and inspired my niece to live an active and healthy lifestyle. In turn, we ended up becoming partners-in-kitchen-crime. We ate predominantly plant-based all day and then cooked animal protein for Cory for dinner.

Over the course of her time with us, my meat and dairy consumption dwindled and I saw vast improvements in my energy, focus and digestion! Cauliflower Taco Tuesday and my herbed vegan ranch dressing have been on rotation ever since and slowly but surely Cory’s NEED for meat with every meal diminished as well. Which has been game changing for me to stay on track!

In August, I started my Stanford Nutrition Science course and two years ago completed work through Nutritious Life, both programs confirmed what I already knew deep down. That a predominantly plant based diet has the ability to drastically reduce your risk of chronic disease and a host of many other issues including bloating, acne, chronic inflammation and fatigue. Through the course, I learned abut the politics of mass food production and the link between big business and our dietary recommendations. Sustainability and environmental impact of meat consumption is also something that keeps me up at night.  The massive amount of water, land and waste that is takes to raise and feed animals for consumption is taking and the toll it is taking on our world. Honestly, it is devastating.

With that said, I am not going to put myself into any specific eating category. Cory and I still consume animal protein, but usually only on Sundays when he cooks family dinner. Eggs are still consumed as well as our local farmers market yogurt and a little bit of cheese. We cut out dairy milk years ago and that was a great place for us to start. Recently, we simply and slowly began replacing one meal a day, then two and gradually over time and with experimentation, not only are we saving money, and feeling completely satisfied, but Cory has leaned out and toned up, my acne battle is finally over, we bound out of bed at 5 AM every morning and I am feeling better than I have in years.

So hopefully, I can inspire some, if not many of you to do the same! I wanted to create this challenge to offer a helping hand and hopefully kickstart a plant- powered appreciation in your life!
