Good morning everyone! On Monday I posted all about how I was going to get myself back together with workouts and eating a mostly plant-based diet, and I have to tell you..I am LOVING it! Now, I am not going full vegetarian, but just cutting back on meat with every meal, and will give you the 5 W’s in the near future! Thankfully, both Cory and I are home all week , which literally has not happened in over a YEAR, and as we prep for hurricane Matthew, I would ask you to keep us in your prayers! We have lived down in Florida for four years and have yet to experience anything but a tropical storm. We are prepped with enough water and food to feed a small army, and a dozen of these gorgeous cookies!
This recipe was developed a few weeks ago when I had 5 brown bananas in my fruit bowl. You should not be afraid of brown bananas as they contain a chemical called TNF or Tumor Necrosis Factor, which has been found to be have anti-cancer properties that combat abnormal cells. Ripe bananas have higher levels of antioxidants as their yellow or green counterparts, but are digested at a quicker rate which gives them a high glycemic index rating, and should be avoided by type II diabetics. These cookies are great for a pre workout due to the natural sugar in them and should be limited to two per sitting! On my Insta-stories I said they are vegan, but I made a mistake because they do contain eggs, but I think you could easily swap the egg with chia seeds in almond milk to make them truly vegan!
Ingredients:
4 C One Minute Oats
2 Ripe Bananas
8 Oz Pumpkin Puree ( About half a can)
2 Eggs
1/2 C Raisins or Craisins
3 chopped dates (if you do not have fresh get dried. Chop and puree them with a little warm water to make a date paste)
1/2 C Roasted Pepitas or Pumpkin Seeds
1 Tbs Pumpkin Pie Spice
1 tsp Cinnamon
Directions:
Preheat oven oven to 350 degrees. In a large bowl mash banana then combine all of the above ingredients and mix. [ I like to use my hands.] The mixture should be moist not dry. If it is too dry simply add more pumpkin and/or more egg. Form cookies into small patties and bake for 12-15 minutes or until set in the middle.
Enjoy them fresh from the oven or with your morning coffee by popping the in the microwave for 20 seconds. They are yummy, scrummy, belly warming treats that your whole family will love! Enjoy!
