Sweet, Salty, Crunchy Roasted Fig and Blue Cheese SaladLately, I have really been enjoying summer produce and taking time to cook meals for Cory and I as we soak up the last few weeks as a family of two. Anytime fig season rolls around, I always have to add them to everything. Why? Because fresh figs are delicious and chock full of fiber and nutrients. I will always be that girl who orders or makes the salty/sweet pizza and figs are the perfect fruit to elevate any dish!

I love to make roasted figs with blue cheese on their own as an appetizer, but adding warm figs to a crisp red onion and cool blue cheese makes this salad sweet, salty, tangy and crunchy! So back to this salad! You can find figs throughout the summer at your local Farmer’s Markets, but my local Publix actually carries them in small batches throughout the year. My heart always skips a beat because fig, peach and cherry season is my absolute favorite fruit season of them all! Anywho, I will stop rambling and share this delicious recipe now!

I served this dish with macadamia nut crusted chicken and tri-color roasted potatoes, but you can easily make it an entree by serving it with chicken or salmon!
