Are you seeing what I see? The first signs of spring. Flowers are beginning to bloom around here and warm thoughts of summer are beginning to take hold. I do not know about you, but with higher temps, comes lighter fair! I have been back in the kitchen and although my time is limited these days, whipping up a healthy meal like this one does not have to take hours. I wanted something light yet satisfying and have been playing around with different types of fish lately.
or today’s recipe, I chose wild caught, previously frozen Alaskan Cod from Safeway’s sister store, Andronico’s Market. Cod is a mild white fish that has a tender yet firm texture. I decided to pan sear it and finish it in the oven and it only took ten minutes. I paired the filets with caramelized Vintage Sweet Heirloom Naval Oranges and sopped up the salty sweet sauce with sourdough bread from The Rustik Oven. Overall, I think this is the best fish dish I have ever created and it only took me 20 minutes from prep to plate.
So what inspired me to get fishy?

Last week, I got to attend my first Safeway Blogger Tour. We started the day at the Monterey Bay Aquarium, where we got a behind the scenes tour from the Seafood Watch Program. The Monterey Bay Aquarium Seafood Watch program helps seafood buyers like you and me make choices for a healthy ocean. Using science-based peer-reviewed methods, Seafood Watch asses how fisheries and farmed seafood impact the government and provides recommendations indicating which seafood are Best Choices, Good Alternatives, and which seafood to Avoid using a very simple color system of green, yellow and red. Green and yellow being your healthiest farmed or wild-caught seafood items and ones the Safeway Andronico’s Community Market’s only stock.
As stated above, for today’s recipe I chose previously frozen wild caught Alaskan cod. The discussion with FishWise in the Monterey Bay Andronico’s Community Market truly changed my mind about the way I shop for fish. After our tour, we were treated to a fabulous lunch featuring Monterey Bay Seafood ®, Vintage Sweets Heirloom Naval Oranges and Rustik Oven Sourdough Bread. Not only was everything extremely beautiful, fresh and delicious. These simple ingredients inspired me to create today’s recipe. The oranges were the perfect accompaniment to such a light fish. I brought home a whole bag and CJ and I devoured all of them over the course of two days. Vintage Sweets Naval Oranges are California grown oranges that have the perfect balance of acid and sugar and they helped caramelized this dish to perfection. The sourdough bread from the Rustik Oven is Non-GMO and made of simple, clean and real ingredients that create rich flavor and a crusty texture. I chose to let the bread stand alone with an elevated butter because to me, there is nothing more satisfying than a piece of crusty, crunchy sourdough topped with grass-fed butter.
