Now that you have the spiralizer….or the need to make low carb pasta, let’s get to work! When the hubs raves about a meal, and says “hey Tay, you can definitely make this again”, all the while searching the bottom of the bowl for any remaining bits…I know the recipe is a keeper. This one was inspired by the idea of one-pot creations. Cory usually does the dishes after I make dinner (Yes….he does dishes ladies) so I decided to go easy on him the night I created sweet potato, sage and cranberry pasta with Italian Turkey Sausage.
This recipe has all insanely comforting flavors in one pot: cinnamon, nutmeg, sage and carmalized onion. I wanted a comforting dish without the calories and turned to my veggie spiralizer for help. As usual, sweet and savory is the name of the game, and all this recipe takes is a little T.L.C.. On a side note: Even though I used the veggie slicer to make “pasta strands” you can slice your potato just like the Zucchini Pasta in episode 1 of the Taylor Walker Fit Kitchen. Make the pasta into ribbons with a traditional vegetable peeler.
Ingredients:
1 Large sweet potato (serves two)
1 sliced yellow onion
1 Tbs grass fed butter (Can use Olive Oil)
1 ½ Tbs chopped fresh sage plus extra for garnish
¼ cup dried cranberries
1 package spicy Italian turkey sausage
1 Tbs Olive Oil
1 Tbs Cinnamon
1/2 tsp. Nutmeg (Optional)
Directions:
Cook sausage in the pan according to directions. You can also throw them in the oven at 425 for about 15 minutes, but this defeats one-stop-shop cooking. After sausage is cooked in pan or oven, drain pan and set sausage aside. Add butter to pan and melt over medium heat. Add onion, and stir occasionally until onions are golden brown.You may want to turn to low and cover for about 15 minutes (Believe me its worth it) After onions are golden, add sage stir for 1 minute, add cranberries and stir additional minute.
Throw in pasta noodles, cinnamon and nutmeg (should dust all the strands of pasta, but add a little at a time. You do not want to overdo it. Add extra olive oil and toss. Cover and stir occasionally over medium heat for 5- 10 minutes or until your noodles are cooked to the desired tenderness. Slice sausage and add to pan to warm them through. Put in a large bowl and sprinkle with extra sage. I dare you to have one bite left over!
