Before CJ was born, I had time to cook every single night, and by cook, I mean 3-course meals with a variety of different ingredients. Many of you have tried my recipes and I always love when one of them becomes a household staple! I am not usually one to cook packaged ingredients, but as a new mother, I find myself looking for convenient and healthy options that are free of unhealthy additives. There are tons of frozen and canned fruits and vegetables that are amazing options for people who have limited time for food prep! This dish is definitely a comforting winter meal that has “stick to your ribs” quality, with the balance of fresh kale, lean protein and hearty spices. I promise you will not have any regrets!
I have seen so many people posting about Trader Joe’s Gnocchi, that I had to see what all the fuss was about! I picked up a couple of packs of the cauliflower gnocchi and one pack of the sweet potato, butter and sage version. Since it was a rainy/cold night last night, I decided to be a bit more indulgent. I cut down some onion and fennel, used a bit of rosemary and went to bed with a full belly and a warm heart. Here is my recipe for Fennel-Kale Turkey with Sweet Potato Gnocchi.
