You guys know that I’ve been sticking to a mostly plant based diet lately. I absolutely love cooking and experimenting with new recipes so much that I really don’t find myself missing meat all that much. I’m realizing that a wide variety of fruits, veggies and healthy grains are all I really need to keep me going throughout the day.
As much as I love to cook, sometimes my day is so busy that a quick meal is all that I have time for. I’m trying to avoid over processed things and also trying to stop spending money on expensive salads, so it can be hard to find a satisfying meal that takes no time but also nourishes me. I recently gifted a girlfriend of mine who had just had a baby Splendid Spoon, and I have been dying to try it myself.

Mornings are the craziest for me, especially if I’m teaching an early class, so having a decent breakfast that takes little to no time is essential. I was pleasantly surprised at how good and filling the smoothies are. My favorite by far was the Green Matcha Smoothie.
I LOVE Matcha- it’s great for energy and also keeping your metabolism moving. It also contains Avocadoand Organic Hemp Protein, which kept me feeling full all morning. I grabbed it running out the door and it really hit the spot.
The soups and grain bowls didn’t disappoint, either. They have lots of different options, so you’ll never get bored. I love trying different cuisines and mixing it up, so I loved the Mexican Tomato Soup and Morroccan Spiced Buckwheat Grain Bowl the most. They’re super filling and tasty, and I like that everything is pre-portioned, so you never overeat. What I really loved about the soups and grain bowls was the range of veggies in them. You can actually see the good quality produce in every meal, and they taste really fresh.
The Morraccan inspired dish is packed with super filling healthy ingredients like chickpeas, broccoli and butternut squash. Plus the hint of sweet currents is so delicious and adds a great texture. It took only minutes to heat up and was perfect to eat during lunch while working on my blog. Having a Splendid Spoon Smoothie for breakfast and soup for dinner meant that I could indulge a little more at dinner time without feeling guilty- bring on the pasta!
Splendid Spoon is so convenient, it’s like really healthy fast food. It requires literally no prep, and you can tweak, pause or change your plan at any time. Such a lifesaver for those crazy busy days!
