Zucchini Pasta with Turkey Meatballs (Check out my cooking video for the step by step directions)
With the Polar-vortex in full swing, all I am hearing from my family and friends is: “I can’t stop eating”. Well, how about a healthy alternative to comfort food? Pasta in particular. This dish is not only carb friendly, but incredibly tasty too! My husband did not even realize this wasn’t his favorite fried meatball.
Folks…They do say summer bodies are made in the winter. So put down that box of pasta and whip up a big bowl of Zucchini Pasta and Turkey Meatballs with me!
What you need:
Meatballs
1 lb Ground Turkey Meat (Italian or regular)
1/4 Cup Fresh Parsley
2 Cloves chopped garlic
1/4 cup yellow onion finely chopped
1 Egg
1/2 Cooked Quinoa (replacement for breadcrumbs)
Tbs. Tomato Paste
tsp Red Pepper Flakes
1/2 tsp Pepper
1/2 tsp Dried Oregeno
1/2 tsp Dried Basil
Pasta
tsp Extra Virgin Olive Oil
2 Fresh medium Zucchini per person
1 Onion coarsely chopped
Your Favorite pasta sauce to top 🙂
This whole process should take about a half hour! Freeze the meatballs and save them for a later date! It is a quick easy weeknight dinner that you and your family will love!
